Gnocchi Aglio Olio

Gnocchi is a pasta made out of potatoes and eggs, tossed in garlic and olive oil.

Ingredients

Mashed potatoes- 200gms

Egg – 1 nos

Flour – 200 gms

Olive oil – 1 tbsp

Chopped parsley – 10 gms

Chopped garlic – 10 gms

Salt – to taste

 Method

In a bowl mix the mash potatoes , egg and flour to make a dough 

Once the dough is nice and smooth roll it out into a long cylinder 1 cm thick.

Divide it evenly as shown below

Shape the gnocchi using the back of a fork

Press the gnocchi gently against the back of the fork  and roll it from one end to another.

Shape the rest of the gnocchi the same way

Cook the gnocchi in boiling salted water for 1 minute.

When you drop the gnocchi in water they immediately sink . But once they are cooked they float on top that’s how you know they’re done.

In a pan heat some olive oil add the garlic and parsley to it along with some salt.

Once the oil is hot add the pasta into the pan and toss it untill it gets evenly coated in oil.
